Ingredients

medium Butternut Squash
ends trimmed, peeled, seeds removed and cut into cubes

medium Red Onion
peeled and cut into chunks

tbsp
Vegetable Oil
or more as needed to fully coat the veggies

Brown Sugar
I prefer light brown sugar for this particular recipe

Salt

Instructions
Preheat oven to 400 degrees.
Prepare squash and onion, adding them to a medium bowl.
Add oil, salt, pepper and brown sugar. Toss well.
Add the veggies to a sheet pan in one even layer.
Roast until tender, about 40 minutes or until for tender.
